DESCRIPTION || This smooth, approachable beer reveals golden hues and puts forward hints of fruity, floral, spicy flavors and aromas.
NAME || An “oblate” is a person who has devoted his or her life to a monastic way of living but has not taken on full monastic vows. With batch #1 being our first released beer, it is apt for us to devote the brewery to being “monkish”.

CRUX || Belgian-style single ale spiced with elderflowers || 5.4% ABV
DESCRIPTION || This is our intrepretation of a table beer which monks would often brew and consume. This soft-golden-colored beer is crisp and quenchable while layered with floral, fruity, and spicy notes from our house yeast and elderflowers.

MORIA || Black Belgianish single with sweet orange peels || 5.0% ABV
DESCRIPTION || Though dark in appearance, the beer has a modest alcohol and very approachable taste. A sessionable black Belgian single with dark malts and sweet orange peels, which reveals subtle notes of citrus, chocolatey roastiness, and smokiness.

RED TABLE || Belgianized red/amber ale spiced with pink peppercorns || 5.6% ABV
DESCRIPTION || A recipe in collaboration with Chef Louie Jocson of Red Table. The beer is colored in deep red hues and forwards a soft bready, biscuity taste accompanied by a fruity, pruney, spicy finish.

FALSE PROPHET || dry-hopped Belgian-style amber || 5.6% ABV
DESCRIPTION || A crisp, dry belgian-styled amber with a combination of caramel and honey malts that has been dry hopped with a large amount of Sterling hops. The "noble" qualities of Sterling lends a spicy, floral, and earthy hoppiness.

POUR TOI || Belgian-style dry-hopped pale ale || 6.2% ABV
DESCRIPTION || (French: "for you") This is for all the hopheady patrons in our tasting room asking for a hoppy beer. However this hoppier beer is of course in line with our monkish ethos -- a pale ale with Belgian caramel malts and bittered, finished, and dry hopped with only earthy, floral, spicy euro-hops.

FLORAISON || "dry-flowered" saison w/ hibiscus & chamomile || 6.4% ABV
DESCRIPTION || ((French: "blossoming") An experimental summer beer that starts off in a saison direction with oats and wheat but steeped with hibiscus and chamomile. Then the beer is "dry flowered" with more hibiscus, chamomile, and sterling hops. Floraison is robed with pinkish & orangish hues and gives a bouquet of floral, spicy, tea-like aromas and flavors.

VIGIL || Belgian-styled dark wheat ale with thyme || 6.9% ABV
DESCRIPTION || A rustic dark brown ale consisting of a large amount of wheat, and balanced touches of caramel and roasted malts. The soft hints of nuttiness, caramel, fruits, and spices are joined by earthy and herbal aromas and flavors from the addition of thyme. With savory nuances, Vigil pairs well with food.
In ancient times, thyme was one of many herbs grown in monasteries and monks stuffed pillows with thyme to aid those suffering with insomnia.

LUMEN || hoppy Belgian-style pale with jasmine flowers || 7.2% ABV
DESCRIPTION || A hoppy golden beer with soft earthy, floral, spicy accents from the hops and a welcoming tea-like touch from an infusion of jasmine flowers.

ROSA'S HIPS || Belgian-style brown ale spiced with rose hips || 7.3% ABV
DESCRIPTION || A dry Belgian brown ale generously infused with spicy, fruity, tangy rosehips. The beer unfolds layers of complex flavors of caramel, toffee, vanilla, ripe fruits, prunes, dates... Be marveled by Rosa's Hips :)

SUEÑO DE LOS ANGELES || Belgian-style it-is-what-it-is ale || 8.4% ABV
DESCRIPTION || (Spanish: “Dream of Los Angeles”) An experimental beer – based on a recipe from a dream the night before brewday – made for 2012 LA Beer Week using the chosen ingredient of prickly pear. This hazy, ruby-peach colored beer is brewed with a copious amounts of wheat, maize, & honey malt, and an unusually large amount of acidualated (sour) malt. During fermentation the beer is drowned with lots of prickly pear puree which contributes an underlying spicy tartness.

ANOMALY || Belgian-style strong dark ale || 8.5% ABV
DESCRIPTION || A strong, dark ale with tastes of chocolate, caramel, and dark stone fruits along with a silky mouthfeel from oats and wheat.

FEMINIST || Belgian-style tripel ale spiced with hibiscus || 9.4% ABV
DESCRIPTION || Heavily infused with hibiscus, the beer displays a pink tinge. The beer greets you with a malty sweetness that quickly dissipates into a dry and tart grapefruit, lemonade finish.

TRIPELIST || Belgian-style tripel ale spiced with rose hips and hibiscus || 9.4% ABV
DESCRIPTION || Infused with rose hips and hibiscus, this tripel has an initial sweetness from the alcohol and malts but dries out on the palette to open up of fruity, floral, and spicy notes.

MAGNIFICAT || Belgian-style Christmas ale with spices || 10.1% ABV
DESCRIPTION || Following the traditions of Belgian Noel beers, Magnificat is our first offering of a Christmas beer. Like a Belgian-style strong dark or quadruple ale, this dark beer has a rich, silky malt profile of caramel and roasted malts, rye, and oats, and reveals complementary accents of dark stone fruits and spices from our Belgain yeast. And to create that liquid-Christmas experience, the beer is spiced with clover honey, sweet and orange peels, coriander seed, nutmeg, and cinammon.

ZOMBIE-ISH || experimental Belgian-style brown with Chinese herbs || 7.7% ABV
DESCRIPTION || An experimental 5-gallon beer brewed for Dionicess' Zombie-themed dinner at Beachwood BBQ & Brewing (Long Beach) on 12.9.12. To pair with a mushroom course, the brown ale is fermented with our spicy and fruity Belgian yeast along with a Chinese herbal concoction -- different mushrooms
and roots (including ginger and ginseng), gogi berries, dates, longans, deer sinews and tendons, bird's nest, agave -- all of which gives subtle nuances of earthy umami.

SELECT MONK 1 || Belgian-style abbey ale w/ oats, wheat, barley || 5.8% ABV
DESCRIPTION || Our first "communal" beer. We brewed this batch with our friends at Select Beer Store (Redondo Beach) – with whom we share the same ONE-year anniversary date and who received our first keg sold and first invoice. This beer, which is a variation of Wes' (the owner) homebrew recipe, is an abbey-style ale with oats, wheat and barley. With a hazy-blond hue, it balances crispness and creaminess and gives hints of citrus and spices.
